Ingredients

  • Shrimp and Rice Noodles
  • 120g raw peeled shrimps
  • 50g leek
  • 1 tsp olive oil
  • 100g edamame beans peeled
  • 100g coconut cream light
  • 2 Tbsp Japanese soya sauce
  • 100g water
  • 50g rice noodles

Instructions

  1. Slice the leek thinly.
  2. Fry the leek and the shrimps in oil on high heat for a few minutes.
  3. Add the edamame beans, coconut cream, soya sauce and water. Let it simmer for a few minutes. 
  4. Meanwhile boil the noodles according to the package.
  5. Serve in a bowl and add some extra flavor like chili, cilantro and lime.
