Keeping to a clean diet is easier and tastier than you think. 😋 The secret of this dish is not to overcook the salmon. Oh, if you can’t find the purple sweet potato or the pink beetroot use the regular types.
150g Salmon filet
150g purple sweet potato
30g pink beetroot
1 tbsp soy sauce
1 tbsp sesame oil
1 tbsp lemon juice
1 tbsp spring onions
Season the salmon with sesame oil, soy sauce and black pepper.
Bake the salmon in the oven for 20 min in 160°C
Boil and mash the potatoes. Season with salt and pepper
Cut the veggies
Place the potato mash on the bottom of the plate, top with the cooked salmon put lemon juice on top of the salmon and place the other ingredients on top.
