Ingredients

  • 14 oz /400 g salmon fillet
  • 1 mango
  • 1 avocado
  • 2 red beetroot
  • 5.3 oz / 150 g rice noodles
  • 2 tablespoons of Japanese soy
  • 1 cup/ 2 dl (200ml) coconut cream
  • 1 red chili pepper
  • 3/4 cup/ 2 dl (200ml) coconut flakes
  • 1 lime
  • 1 cup/ 2 dl (200ml) cilantro

Instructions

  1. Cut the salmon into thin slices, cut mango and avocado into smaller pieces, spiralize the beetroot.
  2. Boil the rice noodles according to directions.
  3. Chop chilli peppers and mix with soya and coconut cream.
  4. Distribute all ingredients into 4 bowls, top with lime wedges and cilantro.
