Welcome to another delicious blog post by our guest bloggers Giuseppe und Giuseppina, the creative food fetishists behind Giuseppe & Fratelli! Today we will present their (almost vegan) vegetarian pasta recipe (their site is in German).

Serves 2 (per serving: 317 kcal, 18 g protein, 16 g fat, 20 g carbs)

Ingredients:

  • 1 zucchini
  • 1 carot
  • 1 parsley root
  • 1/2 red chili
  • 1-2 garlic cloves
  • 180 g tofu (we recommend smoked tofu as it will give your meal a certain “kick”)
  • salt
  • pepper
  • 2-3 tablespoons olive oil
  • oregano
  • 650 g crushed tomatoes

Instructions:

1. Chop the chili and garlic and fry them in olive oil
2. Squash the tofu with a fork, add it and fry it as well. Leave some tofu cubes for garnishing.
3. Add the tomatoes, season with salt, pepper and oregano and leave to simmer for approx. 20 minutes.
4. Prepare the noodles. Peel the vegetables. Use either one of the machines now available for vegan pasta (such as a Mandolin) or just cut thin slices with a knife.
5. Mix the pasta with the sauce and let the mix simmer for 3-4 more minutes.
6. Serve the pasta on a plate and garnish with the tofu cubes.

    Hej, hur gör jag för att spara recepten jag får på mejl? Trodde jag skulle få recepten, träning etc automatiskt till Mina saker, som guldmedlem? Jag har ingenting där…
