Ingredients

Lamb patties

  • 1.1 lb / 500 g ground lamb
  • 1/2 cup / 1 dl (100ml) heavy cream
  • 1 egg
  • 1 teaspoon thyme
  • 1 garlic clove
  • 1/2 cup / 1 dl (100 ml) finely chopped parsley
  • 1/2 teaspoon of chili flakes
  • 1 teaspoon salt

Salad

  • 5.3 oz / 150 g watermelon
  • 1/2  small red onion
  • 5.3 oz / 150 g feta cheese
  • 2.3 oz / 65 g baby spinach
  • 1/2 Chioggia Beet
  • 3 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon chili flakes

Instructions

  1. Peel and finely chop the garlic, combined with the ground lamb, cream, egg, thyme, parsley, chili flakes, and salt.
  2. Shape the food into small patties, fry in the pan on medium heat a few minutes on each side.
  3. Cut the watermelon and the feta cheese into cubes.
  4. Slice the red onion and the beet thin on a mandolin.
  5. Mix with baby spinach, olive oil, balsamic, salt, and chili flakes.
