Ingredients

Salad

  • 14 oz / 400 g cold-smoked salmon
  • 1.5 lb / 700 g potatoes
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 2.3 oz / 65 g Mix salad
  • 2 apples
  • 1  big red beetroot
  • 1/2 cup / 1 dl (100 ml) finely chopped chives
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Creamy sauce

  • 3/4 cup / 2 dl (200 ml) light crème fraîche
  • 1 tablespoon concentrated fish stock
  • 1 lemon

Instructions

  1. Boil the potatoes for about 20 minutes, drain the water and let them cool slightly.
  2. Drizzle over honey, olive oil, salt, and pepper.
  3. Cut thin slices of apple and beetroot.
  4. Stir together creme fraîche, fish and zest from the lemon.
  5. Divide the lemon into wedges.
  6. Mix together the potatoes, vegetables, salad, and chives, top the salad with the salmon and the sauce, serve with lemon slices.
