Tacos don’t have to contain mince. It can easily be replaced with something so simple, and healthy, as cauliflower!

Ingredients

  • 1 cauliflower head 16 oz (540 g)
  • 1 tbsp oil
  • 1 tbsp oregano
  • 1 tbsp garlic powder
  • 1 tbsp paprika powder
  • 1 tbsp cumin
  • 1 tbsp chilli flakes
  • 1 1/2 tsp salt

Salad

  • 2 cups / 4 dl / 400 ml shredded red cabbage
  • 1 ¼ cup / 3 dl / 300 ml shredded carrots
  • 2 avocados
  • 1 red chilli pepper
  • 1 tsp salt
  • 1 lime
  • 1 cup / 2 dl / 200 ml cilantro

Topping

  • 3 tbsp coconut cream
  • 8 whole wheat tortilla

Instructions

  1. Mix the cabbage and carrots together.
  2. Finely chop the chilli pepper and cut the avocado into cubes, mix with the salad.
  3. Add lime juice, cilantro, and salt.
  4. Cut the cauliflower into small bouquets. Heat the oil in a frying pan and fry the cauliflower with the spices and salt on medium heat until golden and softens.
  5. Heat the tortilla bread and serve with the salad, cauliflower and coconut cream.
