Ingredients

  • 200 g of quinoa
  • 300 g berries
  • 2 tablespoons honey
  • 1 orange juice + zest
  • 3/4 cup / 1 1/2 dl (150 ml) coconut cream
  • 1/2 cup / 1 dl (100 ml) chopped almonds
  • 1/2 cup / 1 dl (100 ml) coconut flakes
  • 1/2 cup / 1 dl (100 ml) mint leaves

Instructions

  1. Boil quinoa according to directions, let it cool.
  2. Mix the quinoa with honey orange juice and zest.
  3. Top with berries, coconut cream, almonds, coconut, and mint leaves.
