1. Strawberry Cucumber Salad with Balsamic Vinaigrette

1 large cucumber
1 1/2 cup strawberries

Ingredients:
1 1/2 cups milk
1 cup dry polenta
2 tbsp butter
4 oz goat’s cheese

1 lb boneless skinless chicken breast
2 tbsp olive oil
1/2 balsamic vinegar
1/4 cup honey
1 tbsp Dijon mustard
1 tsp dried oregano
1 tsp dried thyme

3. Panko Herb-Crusted Dijon Salmon

You can’t beat salmon for date night, and herb-crusted salmon is that much better. Eat it with a light fresh salad.
Ingredients:
2 large salmon fillets
1/4 cup Dijon mustard
1/2-2/3 cup of plain Panko breadcrumbs
1 tbsp fresh chopped parsley
1 tbsp fresh chopped chives
1/4 tsp garlic powder
1/4 tsp paprika
1/8 tsp of dried chilli
2-3 tbsp olive oil

4. Grilled Harissa Shrimp with Chickpea-Dill Tomato Sauce

Another 30 minute goodie. Tons of flavor, and a nice change of your typical date night meal is chicken or fish.
Ingredients:
1 tbsp harissa paste
2 tbsp extra virgin olive oil
2 tbsp fresh squeezed lemon
1/2 tsp kosher salt
2 lbs shrimp
2 tbsp vegetable oil
1 medium sweet onion
4 cloves of garlic
1 tbsp dried onion
1/2 tsp chilli powder
15 oz can chickpeas
28 oz can diced tomatoes
1/4 cup full leaves

1 tbsp coconut oil
1 lb boneless skinless chicken breast
2 large carrots
1/2 yellow onion
1/2 head broccoli
1/2 tbsp garam masala
2 tbsp chicken broth
